Menu Planning Monday.


Okay, I saw a blog where she lists her menu every Monday, and she has a big old menu group going. Her address is on the picture.
I guess I'll try that this week. I might copy some of her ideas. And I might not really cook what I have listed. But I've been wanting to be better at planning so at 4 o'clock I don't have to wonder what's for dinner.

Monday--taco stew and corn bread, salad
Tuesday--Sunday mash (leftover roast, gravy, mashed potatoes, corn, all fried up in a skillet)
Wednesdays--Tuna Cheesies http://clayinhishands-sarah.blogspot.com/2009/05/fabulous-food-tuna-cheesies.html and tomato soup and fruit
Thursday--Italian Chicken and fettuccini noodles, veggie
Friday--Ward adult progressive dinner--kids get mac and cheese out of the box, peas
Saturday--papa murphy's for family-cooking fancy dinner for Caleb's homecoming dance group (I'll post what that ends up being later)
Sunday--leftovers from Caleb's dinner (cooked leftover on purpose)

Off to cook my taco stew. Recipes below:

Corn Bread
½ c. butter, melted
2 eggs, beaten
1 cup milk
½ c. sugar
2 c. Bisquick
½ t. baking soda
2/3 c. cornmeal
Mix together and bake in 9 x 9 greased pan 350 degrees 35

Taco Stew Alison Kohutek
1 28 oz. can stewed tomatoes 2 cans tomato sauce
2 cans chili 1 can corn with juice
1 medium onion, finely chopped 1 green pepper, finely chopped
1 t. mustard 2 T. brown sugar
3 – 4 T. salsa 1 package enchilada sauce mix

Begin to stew ingredients together, then add:
cooked meatballs or ground beef (1/2 to 1 lb).
Add salt, pepper, cilantro, and chili pepper to taste. Cook until done.
May also add green chilies, avocadoes, red peppers, yellow peppers, jalapenos.Garnish with tortilla chips, sour cream, guacamole, cheese, or fresh cilantro.

Italian Chicken
Place chicken tenders or breasts in crock pot. Add 2 T. Italian Seasoning. Cook on low 6 hours or until cooked through. Add 1 can cream of mushroom soup and 3 oz. cream cheese. Cook through, about 1 more hour. Serve over noodles or rice.

  1. The Italian chicken is our favorite thing to make in the crockpot! We add a can of mushrooms and use cream of chicken instead. Awesome with bow tie noodles!
